The dish is layered, with rice and meat arranged in tiers, and then cooked together—either through a method called dum (slow steam cooking) or in a pot sealed with dough to trap the flavors. Biryani has many regional variations, such as: Hyderabadi Biryani – known for its spicy, rich flavor and use of basmati rice and marinated meat. Lucknowi (Awadhi) Biryani – more subtle in flavor, cooked with fragrant spices and often parboiled meat. Sindhi Biryani – spicier, with potatoes and tangy notes from yogurt and dried plums. Pakistani Biryani – varies by city, often spicy, rich, and served with raita or salad.
